Prestige is a progression system that allows for the obtainment of powerful, permanent boosts to your bock earnings (referred to as 'earnings bonus'). The mechanic is unlocked as soon as you obtain a Soul Egg from any source, including Challenges and the Daily Gift Calendar.
Serious answer is it depends on your boost situation. If you didn't run any boosts on the highest egg, maybe run some before you prestige. If you did already, then prestige and use them on next run. If you're free-to-play, use jimbo's + soul beacon (highest you have, similar tier/value).

Soul Food will boost the bonus you gain per Soul Egg by 1%. That adds up fast when you have a lot of eggs to hand. Prestige bonus gives you 10% more Soul Eggs whenever you Prestige.
For mid level players (able to reach universe egg without much of a wait or directly upgrade farm to super material/fusion), go to universe egg and fill habs about 95% full, use legendary (yellow) soul beacon, 2x boost beacon, and 2x bird seed boosts while running chickens and prestige on Saturday.

Your Earning Bonus is the percentage increase in the value of the eggs you harvest. Your current Earning Bonus can be found in Settings -> Prestige. Earning Bonus is increased by collecting Soul Eggs and Eggs of Prophecy. Each Soul Egg increases your Earning Bonus by 10% - 150% cumulatively...
