The OP asks if these "Greeks" were Gentiles or Hellenistic Jews. I would suggest a third choice: They were ethnic Greeks who had converted to some form of Judaism. Just as Herod was and Idumean (an ethnic Edomite) and yet a Jew, these were probably ethnic Greeks who were either "God-fearers" or full converts to Judaism.
And he spoke and disputed against the Hellenists [Ἑλληνιστάς]. But they were seeking to kill him. (Acts 9:29, ESV) This is in Jerusalem, and it is obviously that this verse points out Hellenistic (Greek speaking) Jews as opposed to Hebrew/Aramaic speaking Jews. Why is Paul's conflict with the Hellenists and not the Hebrews?

The term “Grecians” (Hellenistic) refers to Jews whose first language was Greek, as opposed to the Jews who spoke Hebrew. It is inconceivable that this would be referring to Gentiles. A very good explanation, thank you. One correction. These 'Greeks' were probably not converts - yet. Thayer's Greek Lexicon under Hellen: "The hellen spoken of in John 12:20 and Acts 17:4 are Jewish proselytes from the Gentiles."
The Greek wasn't translated from the Greek. These also were written in Hebrew. The dead sea scrolls prove this. Also the New Testament refers over 350 times to the Old Testament and 300 of those references are from the 7 books in question. So obviously the Jews in Israel at the time of Christ, used these 7 books.
