a number of airports do not accept mobile boarding passes (I assume the OPs departure point is one of them) The info on the EasyJet website says "If you're flying from an airport that doesn't currently accept mobile boarding passes, please check in online at www.easyJet.com and print out a paper boarding pass for your flight."

When you book an easyJet holiday, you'll be issued with two reference numbers; your holiday booking reference which starts with the number 1, and your easyJet flight reference. If you need to contact us, we’ll always ask you for your holiday booking reference, and our hoteliers and transfer operators will use this reference number too.
You can just keep the booking and not turn up though. Added benefit of that is that there's an outside chance easyJet may change their schedule or cancel the flight and you'd be entitled to a refund. Situation may be different if it's an easyJet Holidays booking where only a deposit has been paid.
Easyjet flights are non-refundable once they've been booked for 24 hours so you won't get the ticket money back but you can call and request a refund of the government fees of your flight that you didn't take.
I have 2 middle names I don't use, they are on my passport - just flown EasyJet no issue. Out of interest I once employed a youth with a North African herratige, can't recall the country. Each child has the same name as father but with one new first name added. By removing one name they have father, remove another - grandfather etc. Full ancestory.
Once the flight has happened, then you can ask easyjet for the APD (tax) back for any tickets bought where the person didn't fly - unlike most airlines, they don't charge an administration fee for this (though you do need to ask them for it).
My understanding is that EasyJet, in common with other budget carriers, only sell individual point-to-point tickets, rather than multi-leg itineraries, so I don't think you can protect yourself in the way you want if you're flying with them, and would have separate bookings, with luggage needing to be claimed and checked in again in between.
For comparison, yesterday I booked a trip to Rome for my wife and myself. The return fare on EasyJet from Gatwick (closer to me) with an extra seat for comfort (total 3 seats brought), seat reservation paid on both sectors for all seats and 1x checked in bag cost cost me £475.
