You can quit a game in Unity by calling the Application.Quit function, which will close a running application. However, while this works to end a built application, Application Quit is ignored when running the game in Play Mode in the editor.

When you press ctrl-alt-del you can loose everything you haven´t save in your scene (which can be hours of work). So Unity does an auto-save when you hit play, and the scene backup is in the Temp folder, as long as you haven´t run Unity again after a force-quit. You can't from Unity itself.

Control+Shift+P in Windows pauses the editor (Command+Shift+P on OSX). You can create your own "pause hotkey" by doing something like this: This makes it so when you press "P", Unity will pause the game, exactly like hitting the "Pause" button in the editor.
